Grilling is a fierce technique because the fish and seafood is cooked with direct exposure to intense heat. Raw ingredients retain their wonderful natural tastes and acquire a unique char broiled taste

A pre-heated barbeque with heavy cast iron or stainless steel grills.

Tips for Grilling:

  • Always have the grill very hot before starting to cook
  • Spray vegetable oil or preferred oil on grill
  • The initial period of intense heat should form a crust that seals the surface and prevents the inside from drying.
  • Sea salt and cracked pepper can be marvelous taste enhancers. Marinades may be used with seafood and fish to keep them moist while cooking and to introduce other flavours.
